Monovarietal J. P. Clesio

Giovanni Paolo Clesio from Cles used to work at the court of Bernardo Clesio, Prince Bishop of Trento in the 1500s and had a great passion for alchemy and philosophy. He brought many innovations in the art of distillation. Precisely, these spirits are obtained thaks to a guarantee he copied in the supply conditions for the Prince Bishop.

We offer a selection of grappas dedicated to J. Paolo Clesio with monovarietal marcs from: Amarone, Chardonnay, Moscato, Müller Thurgau, Nosiola, Teroldego, Traminer. This extraordinary spirit is obtained by processing fresh marcs from a single kind of grape and it’s characterized by an extreme finesse and a typical aroma.

To complete this selection we also offer Gran Riserva and a spirit obtained from aged wine called La Grandeur Brandy.

Traminer – Nosiola – Moscato – Teroldego – Chardonnay – Amarone

This Grappa from Trentino praises a guaranteed origin and quality thanks to the certification of Istituto Tutela Grappa del Trentino. Before the tasting in the appropriate tulip glass, the grappa must rest in there for a few minutes. In this way the aroma will enhance thanks to oxygen and the balance between flavour and smell can be more appreciated.

You can try it as an aperitif, in your coffee, at the end of a meal or in any moment of the day. During the last years it became an essential ingredient as a base in particular cocktails.

Gran Riserva

Grappa from Trentino whose origin and quality are guaranteed by Istituto Tutela Grappa del Trentino.
This grappa is obtained from the distillation of fresh and selected marcs typical of Trentino's lands. It rests in oak barrels for more than 24 months. In this way the barrels donate the typical amber colour, vanilla and fruity aroma and taste whose help this grappa gaining a very smooth and persistent taste.

La Grandeur Brandy

Il Brandy is the general name of the spirit obtained from the distillation of wine, after a period of ageing in barrels.
The etymology of this word derives from the dutch term branvjn - brandewijn, that means "burned wine", in other words "distilled".
It is produced starting from a pure wine, without sulfites added, mainly from trebbiano grapes, without any flaw and not sour. Its sensory qualities derive from the quality of the primary ingredient.
The distillation takes place in a pot still but it still needs a period of ageing in wood barrels before it can be called "brandy".

Cadevita

Cadevita “Aca de vita“, it means “water of life”. Grappa from Trentino whose origin and quality are guaranteed by Istituto Tutela Grappa del Trentino. It is obtained by a traditional discontinuous distillation of fresh marcs following a strict policy document.
The philosophy of this product is contained in the phrase: “Grappas of Trentino, produced with love, strictly controlled”. Every bottling process contains a date and analysis certification.

Cadevita

Grappa obtained from fresh and selected marcs from Trentino, following a discontinuous steam bain-marie distillation method. It is characterized by a very harmonious smell with wild berries notes. The taste is persistent and fruity with an exceptional embracing elegance.e.

Cadevita Riserva

This grappa is aged in small oak barrels for at least 24 months and is characterized by the typical golden yellow colour. This grappa is very smooth with wood and vanilla notes. It’s the perfect ingredient to enjoy a relaxing or meditative moment, maybe even with a good cigar on its side.

Selected grappas Claudia Particella

            Our monovarietal grappas are characterized by an extreme finesse on the taste and an intense aroma which helps recognising one from the other. A monovarietal grappa is a spirit obtained from the Trentino’s traditional production method of fresh marcs taken from a single kind of grape.

            This selection is dedicated to the beautiful court lady Claudia Particella, mistress of the Cardinal and Prince Bishop of Trento Carlo Emanuele Madruzzo (1600), a woman of passion and ambition who took the arts of vinification and distillation in Trentino to important levels.

            Availables in the 1906’s version, in memory of the year of foundation of our company: Amarone, Teroldego and Traminer 1906, the result of a long period of time spent in deep contact with wood.

            Every single monovarietal maintains its features even during the ageing:

  • TRAMINER 1906: very smooth and aromatic grappa with floral notes;
  • TEROLDEGO 1906: classic slightly dry grappa from Trentino;
  • AMARONE 1906: well bodied grappa, very aromatic, strong with wild berries notes.
Flavoured grappas

Grappas obtained by the distillation of pure marcs from Trentino enriched with aromatic herbs whose help sweeten and distinguish flavor and smell, moreover enhancing their digestive properties. Available in 0,7 lt and 0,2 bottles with windowed case.

            Grappa Amara Mount Gazza (bitter with gentian), Woodruff, Stone Pine (Pinus cembra), Cumin, Hay, Finocchina (Fennel), Genepy, Juniper, Licorice, Mountain Pine, Nettle mint, Pizzichina (chili pepper), Rue, Edelweiss, Tredicina (13 herbs).

Amara Mount Gazza

Grappa based on gentian root, characterized by a very “bitter” taste
Mount Gazza is a mountain located in the hearth of Trentino Dolomites, above the village of Ciago, where our founder was born. It is exactl on this mountain that Giuseppe Cappelletti first start to gather medicinal plants. Gentian is considered the most digestive one.

Woodruff

Perennial plant of 15-20 cm height with white little flowers. It's characterized by unmistakable taste and aroma whose refine this grappa, donating it the peculiar smell of Trentino's woods.
Woodruff's leaves contain vitamin C. Its properties are: depurative, diuretic, sedative, tonic, antiseptic. In the past, dried woodruff was used to give a good smell to laundry, to keep away bugs and purify the rooms' air in the house

Stone Pine

Liqueur characterized by an aromatic flavour obtained by the infusion of Stone pines in grappa from Trentino. This pine (pinus cembra) is a perennial needle-shaped plant growing in our Alps and has balsamic and digestive properties.

Cumin

Grappa from Trentino with cumin's fruits.
Cumin is perfect to season a dish, it helps the digestion, is perfect against halitosis, aerophagy and meteorism. It eliminates bowel gas and helps in case of abdominal spasms and cramping, even of nervous origin.

Hay

Thanks to the flowers of Trentino's high mountains fields, we obtain this peculiar liqueur.
The secret recipe is simple: selected and slightly dried hay left in infusion with alcohol.
It is not characterized by a particular smell, the magic is in the flavour: in the mouth we immediately taste the aroma and flavour of the delicate flowers of our mountain, then comes the herbaceous aftertaste of cut grass which immediately throws us in a bucolic world.

Finocchina

Finocchina means the fennel naturally growing on the southern areas of our peninsula. It is especially searched and appreciated for its properties, even by experts of gourmet.
It is used by people with a difficult digestion. In the kitchen the so-called “seeds” are mostly used to aromatise donuts or other home cakes and to spice mulled wine or infusions.

Genepy

This sweet liqueur derives from the same aromatic plant belonging to artemis family and has digestive and balsamic properties.
Genepy is a small protected bush growing mostly in Piedmont and Val d'Aosta around a quite low altitude (2000 m above sea level).
Indeed Genepy was known as “the aspirine of mountaineers” for its balsamic, diuretic, fever-repellent and antiseptic properties.

Juniper

Juniper is a shrub growing in untamed areas, on cliffs, fields, woods near the sea or in the mountains.
It's possible to use berries, leaves and wood. . In the grappa it releases both an excellent taste and an intense smell.
This grappa has a pleasant flavour, a good compromise for who prefers a not to sweet and not to bitter grappa.

Licorice

Licorice is a plant growing in the sandy lands of Calabria and Sicily.
The root is used both for external and internal use. Infused in grappa, as well as its benefits, it offers a very pleasant taste on the palate.

Mountain Pine

Known since ancient times for its fragrant oily resin, it is nowadays considered protected. It grows in our Alps above 1100 m of altitude and it is easily recognisable.
It is a big shrub very rich in resin, characterized by the peculiar smell of mountain pine.
From a herbalist point of view, its properties are similar to those of scots pine: balsamic, expectorant and antiseptic.

Nettle mint

Nettle mint mint is a kind of nettle found in Trentino above 1300 m of altitude and is probably called so because it grows together with a very fragrant mint.
The climate and altitude enhance the well known properties of this special nettle (which in the grappa doesn't sting). The recipe of its use in grappa has been rediscovered in an archive of a formulary dating back to 1500.

Pizzichina

Grappa with chili pepper. In out production chili pepper is involved in the infusion but not left in the final bottle of grappa.
Initially this seems a classic grappa, but the hot “pinch” of chili pepper arrives immediately. This makes this grappa unique.
The discovery of chili pepper is ascribable to Dr. Chanca of Seville, who found it in Haiti during the second trip of Cristoforo Colombo. Since then, chili pepper was widely spread thanks to its properties and effectiveness.
This grappa is perfect after large meals, as ingredient in meat sauce and barbecues, in cocktails containing cola.

Rue

“Solemn” herb which maintains all the smell of Trentino's mountain. It is slightly bitter and perfect to help the digestion.
A popular proverb says: Rue for evil is due , meaning that this little plants helps to recover from every sickness.
In the past centuries the use of medicinal herbs was important, considering that it was the only resource of healing offered from the nature. Nowadays we maintain this tradition for the value it had and for the one it still could have.

Edelweiss

The infusion of this little but strong protected flower resembles more to a liqueur than a grappa because of the addition of a bit of honey to strengthen the flavour.
The popular name derives from the scientific latin Leontopodiumwhich literally means “leonine foot”.
The plants are maximum 20-30 cm high, the leaves are covered in silvery hair and grow at the base of the plant as rose petals. Its petals are white coloured fleshy, velvety bracts clustered in a star form.
Edelweiss is a rare and protected plant, a typical flower growing on our Dolomites and neighbouring mountains. For this reason it is a symbol of our mountains.

Tredicina

Grappa from Trentino made with 13 herbs. It is a magic number of fragrant herbs with a multitude of virtues to obtain a grappa of the most genuine Trentino's tradition.
Plants, flower and roots are blended in a perfect balance for a pleasantly bitter taste.
Gentian, Rhubarb, Woodruff, Mint, Nettle, Bitter Orange, Juniper and Centaury are only a few of these 13 herbs...the other are left to your discovery once tasted.

Williams

The spirit of Williams pear is famous for its peculiar aroma and typical, unmistakable taste. Its pulp is fruity, light and rich in sugar. Even through distillation it mainains all its peculiar taste.

Grappas from Trentino

This is the classic grappa from Trentino as our grandfathers used to produce it. IT is the result of man’s work, a fine grappa, young, very well balanced and harmonic in flavours and smell, obtained from an accurate selection of marcs from Trentino.

The distillation takes place in a pot still and allows to maintain unaltered the aroma and smell of the original grapes.

El Vecio Lambic del Fondatore

Trentino's grappa El Vecio Lambic left to rest in wood for 18 months. The wood gives colour and smell, maintaining the qualitative structure of this spirit. It’s the perfect ingredient to enjoy a relaxing or meditative moment, maybe even with a good cigar on its side.

It is dedicated to Knight Giuseppe Cappelletti, who founded our company with his brothers in 1906. .

El vecio lambic

Grappa with 40% alc. Vol., obtained from an accurate selection of mostly red grapes marcs from Trentino, distilled following an ancient tradition. The aromatic flavour is the one of a typical grappa from Trentino.

Thanks to a large difference in temperature range between night and day, the grape's skin grown stronger, maintaining inside all the high quality abundance of flavours that we find again in this spirit.

Grappa dell'Alpino 40°

Grappa obtained from an accurate selection of selected marcs from Trentino, distilled following an ancient tradition.
The label with the Italian alpine trooper represents the traditional grappa from Trentino as our grandfathers used to produce it. It is the result of man's work, a fine but strong grappa as our alpine troopers: young, determined, very harmonic in well balanced flavours and smell.
For new and sofisticated sensations it can be paired with dark chocolate, both fresh or aged cheese, nuts, honey; it can be used directly in fruit salads, cakes, ice-creams. In the kitchen it's excellent in meat sauces, it's special in meat preparations as lamb or pork roasts, perfect to simmer grilled meat or fish (as prawns) until reduced.

Grappa dell'Alpino 50°

Grappa from Trentino made of selected marcs distilled following an ancient tradition.
This grappa is a memory of our Italian alpine troopers who fought for the Italian Army in the mountains. They were unmistakable thanks to their hat with a long black feather. This is the typical grappa from Trentino with a strong taste.

It’s the perfect ingredient to enjoy a relaxing or meditative moment, maybe even with a good cigar on its side.
